Mini Tortilla Pizzas [In a Muffin Tin!]


Looking for an easy, family-friendly weeknight dinner? These mini tortilla pizza cups are on the table in less than 20 minutes and can be easily customized to whatever toppings you desire!

Why Make This Recipe?

One of my sleeper pick recipes is for these Tortilla Pizzas! It’s such an easy and simple recipe that I almost considered not posting it. But in true form, when I doubt myself you all end up loving it. I think the fact that they’re so easy IS the reason they’re so popular.

These Mini Tortilla Pizza Cups fit that rule too! They’re basically a mini version of my tortilla pizza recipe but baked in a muffin tin. I mean everything is better when it’s miniature, right?!

So why make this recipe?

  • Kid-Friendly – my kids LOVE these. Maybe it’s cause they’re mini? Maybe it’s because they taste like pizza? Whatever the reason I’m thrilled they like them and it’s a great vehicle to hide veggies!
  • Easily Customizable – you can completely customize these tortilla pizza cups to make them your own. Whatever toppings you prefer or have on hand can totally work!
  • Ready in under 20 minutes – this includes prep work! All you need is 10 mins of baking time so you can count on these for a quick weeknight meal.

Ingredients in Mini Tortilla Pizza Cups

  • Olive oil spray – or any other cooking spray to grease your muffin pan.
  • 10 inch tortillas – feel free to use flour, corn or grain-free. You’ll get 4 rounds per tortilla.
  • Marinara sauce – or any other pizza sauce. My homemade tomato sauce is probably my favorite choice!
  • Mozzarella cheese -or any other desired cheese that will melt quickly.
  • Desired toppings – see suggestions below.

You’ll also need a muffin tin and some round cookie cutters (2-3 inches).

How to Make Mini Tortilla Pizza Cups

STEP 1: CUT OUT CIRCLES

Use your round cookie cutter to cut out 12 small rounds from your tortillas. You’ll be able to get 4 rounds per tortilla. Place a small tortilla round into each muffin slot and push to form to slot.

STEP 2: PREP TORTILLA PIZZA CUPS

Divide marinara sauce equally into each cup (roughly 1 tbsp into each). Add desired toppings. Top with shredded mozzarella.

STEP 3: BAKE

Bake in oven for 8-10 minutes or until cheese has melted and cups are golden brown. Use a knife or spatula to remove your mini tortilla cups and serve.

Topping Suggestions

Veggie – add a few tablespoons of fresh tomatoes, red onions and red or green peppers. Olives are great too if you like them. For sneaky greens try cooked spinach or broccoli, chopped finely.

Meat-lovers – add about a 1/4 cup of meat like pepperoni, cooked sausage or ground beef.

Pesto – sub store-bought or homemade pesto in place of pizza sauce. Top with desired cheese. Might I suggest this sundried tomato pesto?

Mexican-style – use enchilada sauce in place of pizza sauce. Top with a mexican blend cheese and desired toppings.

BBQ-style – use BBQ sauce in place of pizza sauce.

Buffalo-style – use buffalo sauce in place of pizza sauce and top with blue cheese crumbles.

FAQs

What if I don’t have a round cookie cutter?

Use a small cup or mason jar and a knife to trace a circle around the cup. This will get you perfectly round tortilla circles without a cookie cutter!

Are these gluten-free?

You can make them gluten-free by using corn tortillas or grain-free tortillas.

Can you make these vegan?

You can make them vegan by using a vegan shredded cheese that will melt.

Can you double this recipe?

Absolutely! This recipe can easily be doubled, tripled or made for however many mouths you’d like to feed. You’ll need more than one muffin tin if you’d like to bake them at the same time!

Can you make them ahead of time?

Yes! Feel free to bake in advance and then store in the fridge. When ready to eat you can reheat them in the oven or in an airfryer for 1-2 minutes.

Storage Instructions

Place mini tortilla pizzas in an airtight container and store in the fridge for 2-3 days. Reheat on in oven or in air-fryer (see instructions above).

To freeze: Freeze leftovers on a sheet pan for 3-4 hours. Place frozen pizza cups in a ziplock bag and freeze for up to 3 months. Allow to thaw overnight in fridge or bake in oven for 10 mins to thaw.
